Use separate water to reduce contamination potential between potatoes and chicken. Lid from box of raw chicken used to hold bags of cooked chicken. All containers used to hold food must be durable and cleanable. Discard lid and use proper container. The following items need cleanings: breading table, shelf by fryer and the potato cutter. Items in hand sink. Keep hand sink open at all times for hand wash. Floor drain in back room not draining properly. Repair.

Waffle House, 1232 E. Ash St., Piqua — Observed food employee change gloves and not wash hands before putting on clean gloves. Must wash hands before putting on clean gloves. Cut lettuce and bag of lettuce without date. All ready to eat TCS foods – i.e. cut lettuce – must be dated with date opened. Discard after seven days. Prep unit holding TCS foods above 41 degrees. Ham, 47 degrees; tomatoes, 48 degrees. Keep all TCS foods below 41 degrees at all times to prevent bacterial growth. Repair called in. This has been a repeated issue with this unit. Replace if cannot be permanently repaired. The dish washer is not reaching 180 degrees during sanitize cycle. Must reach at least 180s degrees to sanitize. Repair called in. This is a repeated issue with this unit. Replace or permanently repair. The dish washer is leaking water. Repair. The can opener, vegetable cutter and refrigerator exterior need cleaning. Provide paper towels at back hand sink so handle can be washed properly. Remove un-used items from storeroom to aid cleaning.
