Feb. 18

Lee’s Famous Recipe Chicken, 102 S. Sunset Drive, Piqua — Uncooked potato wedges dunked in same water used to bread raw chicken. Use separate water to reduce contamination potential between potatoes and chicken. Lid from box of raw chicken used to hold bags of cooked chicken. All containers used to hold food must be durable and cleanable. Discard lid and use proper container. The following items need cleanings: breading table, shelf by fryer and the potato cutter. Items in hand sink. Keep hand sink open at all times for hand wash. Floor drain in back room not draining properly. Repair.

Wal Mart Super Center, 1300 E. Ash St., Piqua — Provide working thermometer for cold deli case so temperature can be monitored.

Edison State Snack Bar, 1973 Edison Drive, Piqua — Provide sneeze guard for new pizza station to prevent possible contamination. Uncooked pizza kept at room temperature. Keep all TCS foods below 41 degrees to prevent bacterial growth. Items moved to refrigerator. Provide thermometer for condiment prep unit so its temperature can be monitored. The following items need to be cleaned: can opening, rolling pins, two door freezer.

Feb. 10 Piqua Catholic – North, 503 W. North St., Piqua — Satisfactory at time of inspection.

311 Drafthouse, 311 N. Main St., Piqua — Old chicken box being used to store equipment. All storage items must be smooth, durable and washable. Items discarded and contents re-washed. The slicer and microwave interior need to be washed.

Feb. 11

Knights of Columbus, 204 W. Ash St., Piqua — Satisfactory at time of inspection. Remember to wash, rinse and sanitize utensils. Use 50 ppm chlorine, 200 ppm quaternary ammonia.

Feb. 16

El Herradero, 1598 Covington Ave., Piqua — Food employee cutting produce with bare hands. Bare hand contact is not allowed with ready to eat items. Bulk containers of food without labels. All food items not in original containers must be labeled unless unmistakable to prevent misuse. Time not marked when salsa was taken out of refrigerator. If time is used as a public health control, the time the item is removed from refrigeration must be marked. The refrigerator below grill holding food about 41 degrees: tomato, 47 degrees; mushrooms, 47 degrees. Keep all TCS foods below 41 degrees at all times to prevent bacterial growth. Repairman called. Non-food grade containers being used to hold food items. All food containers must be food grade material that is easily cleanable and durable. Provide thermometer for refrigeration units so temperature can be monitored.

Feb. 12

Buffalo Wings and Rings, 989 E. Ash St., Piqua — Observed container of blue cheese above 41 degrees in front prep unit. Blue Cheese, 53 degrees. Keep all TCS foods below 41 degrees at all times to prevent bacterial growth. Be careful not to fill containers too full.

Waffle House, 1232 E. Ash St., Piqua — Observed food employee change gloves and not wash hands before putting on clean gloves. Must wash hands before putting on clean gloves. Cut lettuce and bag of lettuce without date. All ready to eat TCS foods – i.e. cut lettuce – must be dated with date opened. Discard after seven days. Prep unit holding TCS foods above 41 degrees. Ham, 47 degrees; tomatoes, 48 degrees. Keep all TCS foods below 41 degrees at all times to prevent bacterial growth. Repair called in. This has been a repeated issue with this unit. Replace if cannot be permanently repaired. The dish washer is not reaching 180 degrees during sanitize cycle. Must reach at least 180s degrees to sanitize. Repair called in. This is a repeated issue with this unit. Replace or permanently repair. The dish washer is leaking water. Repair. The can opener, vegetable cutter and refrigerator exterior need cleaning. Provide paper towels at back hand sink so handle can be washed properly. Remove un-used items from storeroom to aid cleaning.
